Golden Goodness!
Hot, golden fried plantains that will make the perfect snack!
Ingredients

cups
Water
3
cloves
of garlic
mashed
2
tsp
Salt
1
cups
½vegetable oil
2
green plantains
Instructions
Mix the water, garlic and salt in a glass bowl.
Peel the plantains and slice length wise.
In a large pan, heat the oil to approximately 325 degrees.
Add the plantains to the oil and fry for about a minute per side until they are yellow in colour.
Remove the plantains from the pan and place the, on a sheet of parchment paper to dry.
Press the plantain down using a wooden spoon until it is half of the size it was before.
Put the plantains in the bowl with the water, garlic and salt.
Allow them to soak for a minute and then pat them dry to remove and excess water.
Reheat the oil to 325 degrees F and then allow the plantains to cook for two to four minutes until the turn golden brown.
Remove, and place in a dish lined with paper towels.
Serve
