Kuzhambu It Up
A kuzhambu recipe with no onion or garlic in typical Brahmin Iyer style
Ingredients
Manathakkali vathal- 2 1/2 tbsp
Tamarind – small lemon sized ball
25 grams-old tamarind
Sambar powder – 5 tsp
Salt + as needed
For the seasoning

of Oil

Mustard seeds
1/4
tsp
fenugreek seeds

tsp
Tur dal
1
Red chilli
pinch
aof Hing /asafoetida
Few curry leaves
Instructions
Soak the tamarind in 2 -2 1/4 cup of hot water for 20 minutes.
Extract the juice and throw the pulp.
If using new tamarind, take little extra than ingredient mentioned
In a pan, add the oil
Once oil is hot, add mustard seeds.
When the mustard seeds is done popping, add fenugreek and tur dal.
When Dal changes color, add hung and red chillies and saute.
Then add manathakkali vathal and stir for a minute.
Add salt, sambar powder and curry leaves.
Saute for a few seconds and add tamarind extract (about 2 cups)
Stir well and cook until the mixture thickens and oil seperates and forms layer on top. This will take around 20 to 30 minutes
Serve with rice.
