Manga Manga
Tangy, sweet and spicy, this Mango Thoku is super addictive. Eat it with dosa, idly or just dig your spoon in already.
Ingredients

medium sized unripe/raw mangoes
peeled and finely grated
2 1/2 – 3

red chilli powder

turmeric

salt to taste

fenugreek seeds
dry-roasted and powdered
1/4- 1/2
tsp
jaggery

Instructions
Heat oil (2 tbsp) in a heavy bottomed pan and add the mustard seeds and asafoetida.
Add the grated mango and stir-fry on medium flame for 4-5 minutes.
Add the chilli powder, turmeric, salt and (1 tbsp) oil and mix well.
Keep stirring on a low flame for another 8 minutes.
Add the fenugreek and jaggery.
Stir-fry for another 2 minutes.
Oil will separate from the thokku- remove from heat and allow to cool.
Store until needed in an air-tight container for a month in the fridge.
