Manga Manga
Tangy, sweet and spicy, this Mango Thoku is super addictive. Eat it with dosa, idly or just dig your spoon in already.

  1. Heat oil (2 tbsp) in a heavy bottomed pan and add the mustard seeds and asafoetida.
  2. Add the grated mango and stir-fry on medium flame for 4-5 minutes.
  3. Add the chilli powder, turmeric, salt and (1 tbsp) oil and mix well.
  4. Keep stirring on a low flame for another 8 minutes.
  5. Add the fenugreek and jaggery.
  6. Stir-fry for another 2 minutes.
  7. Oil will separate from the thokku- remove from heat and allow to cool.
  8. Store until needed in an air-tight container for a month in the fridge.
