Instructions
  1. Roughly chop lemongrass and red chillies. Slice ginger and galangal. Quarter onion.
  2. Grind garlic with ginger, galangal, onion and half the chillies to a coarse paste.
  3. Transfer the ground paste into a bowl and add 1 tbsp water and mix well.
  4. Crush lemongrass and the remaining chillies in a mortar with a pestle. Transfer into the same bowl, add salt and mix well.
  5. Add chicken pieces and mix well. Keep in the refrigerator to marinate for 3-4 hours.
  6. Roughly tear banana leaf into 4 pieces.
  7. Preheat oven to180ยบ C.
  8. Stuff bamboo piece with the marinated chicken, seal each end with a piece of banana leaf and tie a twine around it to secure the leaf.
  9. Place the stuffed bamboo vertically in a cake tin, place it the preheated oven and cook for an hour.
  10. Remove from oven, unwrap the bamboo, remove chicken and place on a serving plate and serve immediately.
