Ingredients

red bell pepper

red onion

corn kernels

shelled edamame

avocado
peeled and chopped
1/2
cup
cherry tomatoes
cut in half

thyme

mint

fresh lemon juice

olive oil
Salt
to taste
pepper
to taste
Instructions
Take a non-stick skillet and heat the oil.
Add bell pepper and red onion and cook on medium flames for about three minutes till the vegetables are tender.
Add corn and edamame then cook till the corn starts caramelising.
Turn off the heat and add the cherry tomatoes, avocado, thyme and mint.
Toss all the vegetables with some olive oil, lemon juice, salt & pepper and serve.
