Max’s Beer Batter Maple Bacon Spring Break Cupcake

Instructions
Preheat the oven to 350°F
Take two muffin tins and line twenty cups with cupcake liners and keep it aside.
Add flour, sugar, baking soda and salt to a bowl and whisk it together.
Add butter and beer to a large sauce pan and simmer them together on medium heat till the butter melts.
Stir in the cocoa powder and chocolate chips till the mixture is smooth and then take it off the heat.
Set aside to cool.
Whisk the eggs and yoghurt in a large bowl till they become smooth.
Slowly add a little cooled down chocolate mixture to it and keep whisking it in.
Whisk till the mixture is homogeneous, then add vanilla and mix it in.
Add the dry mixture we mixed earlier in the chocolate mixture and combine it well.
Ladle the mix into cupcake liners and fill halfway.
Bake for 15 minutes and on removing check the cupcakes by inserting a toothpick.
If the toothpick comes out clean, the cupcakes are cooked.
Line a large baking sheet with aluminum foil.
Put the bacon strips across a baking rack and keep this on the baking sheet.
Baste the strips with maple syrup and put it into the oven at 375°F
After baking for 5 minutes, take the tray out, brush on some maple syrup and put it back in.
After another 5 minutes, take the tray out, flip the bacon, brush the flip side with maple syrup and put it in for another 5 minutes.
Repeat the basting process once more for the flip side and cook for final 5 minutes.
Remove the bacon from the oven and let it rest.
Take butter and the cream cheese in a large bowl and whisk them till they are incorporated well.
To this mixture, add powdered sugar, maple syrup, and bacon drippings and mix that in too.
When the mix is smooth, you can add some more sugar to get the right consistency.
Add the frosting to a piping bag and frost all the cupcakes.
Crumble the bacon on top of the frosting and refrigerate these for an hour before eating.
