Ingredients

kg
beef
cut into bite-sized pieces

tbsp
flour
2
tbsp
olive oil
1
large onion
chopped
2
cloves
garlic
chopped
2 -3
jalapeno peppers
seeded and minced
3
cups
beef stock
2
tbsp
tomato paste
4
tsp
cumin
1
tsp
chili powder
Instructions
Preheat oven to 350 degrees F.
Cover the meat pieces in flour and brown quickly in oil in an ovenproof pot.
To the beef chunks add onion, garlic, jalapeno, beef stock, tomato paste, cumin and chili powder and bring to a simmer.
Cover the pot and place in the preheated oven, baking for about 2 to 2½ hours, until meat is extremely tender.
Serve.
Recipe Notes
Serve it on top of hot steamed rice or as a stuffing in crunchy corn tortillas.
