A delicious black bean preparation with chicken broth and cheese.

Ingredients

olive oil
4
cloves
garlic
finely chopped
1
large jalapeno
seeded and chopped
tsp
½ground cumin

g
cans black beans
rinsed and drained
400
ml
chicken broth
fresh lime juice
fresh cilantro
chopped
1
cup
Monterey Jack cheese
Instructions
Heat oil in large saucepan over medium-high heat.
Add garlic, chili and cumin and sauté for 30 seconds.
Add beans and broth and cook for 5 minutes, stirring occasionally.
Coarsely mash beans with potato masher.
Continue boiling until thick, stirring frequently, about 20 minutes.
Season to taste with lime juice, salt and pepper.
Transfer to bowl; add the monterey jack cheese on top and microwave for 2 minutes to melt the cheese.
Sprinkle with cilantro.
Serve.
