Ingredients

English muffin
split and toasted

Large Eggs
2
tbsp
Oil
2 -3
tbsp
Mexican salsa
2
slices
cheddar cheese
salt and pepper to taste
Instructions
In a small bowl, beat egg, salt and pepper.
Heat oil in a skillet and add the egg mixture.
Cook and stir until eggs are set.
Spoon out the egg mixture equally on halves of English Muffin and top with salsa and then sliced cheese.
Place on a baking sheet and broil until cheese begins to melt.
Serve.
