Ingredients
500
g
skinless chicken breast half

tbsp
chili powder

tsp
cornstarch
cup
½chicken broth

tbsp
olive oil
1
cup
frozen whole kernel corn
thawed
2
medium tomatoes
seeded and diced
1
cup
canned black beans
drained
tsp
¼salt
1
clove
garlic
minced
cup
¼green onion
sliced
Cilantro to taste
Instructions
Cut the chicken into thin strips and toss with chili powder, coating well. Leave to marinate for 10 minutes.
Combine cornstarch and chicken broth. Set aside.
Heat 1 tablespoon oil in a skillet at medium high heat for about 2 minutes.
Add chicken and stir-fry for 3 to 4 minutes. Remove from skillet and set aside.
Pour remaining oil into the skillet.
Add corn, tomato, garlic, and green onions and stir fry for 2 minutes.
Return reserved chicken to the skillet.
Add broth mixture, beans, and salt.
Cook everything together, stirring constantly, until thickened.
Serve.
