A healthy bout of vegetables stir fried in olive oil.

Ingredients
1
tbsp
olive oil
2
cloves
garlic
minced
½ small jicama (peeled
cut into 4” strips, about 2 cups)
1
small red bell pepper
cut into 4” strips
1
medium zucchini
cut into 4” strips
1
medium yellow summer squash
cut into 4” strips
1
fresh jalapeño chile (seeded
chopped)
tsp
¼dried oregano leaves
tsp
¼cumin
salt to taste
Instructions
Heat oil in large skillet over medium heat.
Add garlic and cook whilst stirring for 1 minute.
Add jicama and bell pepper; cook and stir until crisp-tender, about 2 to 3 minutes.
Add all the remaining ingredients and mix well. Stirring frequently, cook until vegetables are tender, about 3 to 5 minutes.
