  1. Heat oil in large skillet over medium heat.
  2. Add garlic and cook whilst stirring for 1 minute.
  3. Add jicama and bell pepper; cook and stir until crisp-tender, about 2 to 3 minutes.
  4. Add all the remaining ingredients and mix well. Stirring frequently, cook until vegetables are tender, about 3 to 5 minutes.
