Ingredients

fine rava/sooji
3
cups
Milk
8
tablespoons
ghee

sugar
½
teaspoon
cardamom powder

strands of saffron

raisins
Instructions
pour the milk into a thick bottomed dish, add the sugar according to your preference and then mix in the saffron strands.
let the milk reach boiling point on medium heat, mixing occasionally.
in a second dish, warm up the ghee.
lower the flame before adding the cashews.
then add in the rava and mix it all together properly.
add ½ teaspoon of cardamom powder.
broil the rava on low flame for about 6 to 7 minutes.
when the cashew starts to change colour and the ghee is separating from the sides, then the rava is done.
continue to mix as you add the raisins.
and once the milk is ready, add it to the rava mixture.
blend quickly, but be careful of spluttering, till thick.
smooth the mixture in the dish and let it stew for a few minutes on a low flame and then serve, hot or cold.
