MINT SAUCE
Another classic sauce which has been chronicled many a time, but I recently made it and found it so good, I cannot resist mentioning it.
Ingredients

tsp
demerara sugar
2
tsp
malt vinegar
keep it close at hand in case a splash more is needed
1
tsp
boiling water
a bunch of mint
picked and finely chopped
Instructions
Dissolve the Demerara sugar in the vinegar, with the aid of the boiling water. Pour over the mint and mix. If you feel it is too dry, or not sharp enough, adjust with a little more malt vinegar.
