Clam And Fish Chowder Recipe

potatoes
peeled and halved

leeks
finely chopped

celery stalks
finely chopped
4
sprigs
thyme
salt and pepper

dry white wine
4
cups
fish stock
2
cups
heavy cream
4
pounds
little neck clams
scrubbed
2
pounds
skinless cod
roughly chopped
Instructions
Heat the oil and butter together.
Add the potatoes, leeks, celery and thyme and sauté.
Add the salt and pepper and stir for five minutes.
Add the wine and allow to come to boil. Cook until halved.
Add the stock and cream and add the salt and pepper and bring to a simmer.
Simmer for 60 minutes.
Add the clams and stir for 10 minutes.
Season the cod and add to the pot.
Simmer for five minutes and serve.
