A yummy collaboration of Spinach and Yogurt
A healthy recipe for a yogurt-based gravy made with fresh spinach and flavoured with a whiff of coconut.

Ingredients

bunch of spinach

cup
Grated coconut

yogurt

dried red chillies

For tempering

Instructions
Wash the spinach thoroughly and chop.
Boil the spinach in a pot with a cup of water for roughly 3 to 4 minutes.
Remove the spinach and allow to cool on a plate.
In a blender, blend the spinach to a paste without adding water.
Using a frying pan, heat the oil, fenugreek seeds, mustard seeds and chillies.
Blend this spice mix along with the coconut and yogurt.
In the pot used to boil the spinach, add the spinach mix as well as the yogurt spice mix with 1/4th cup of water.
Stir well under low heat until the mixture begins to boil.
Remove from heat and serve with steamed rice.
