Nothing like Kothu Parota
Nothing says street food like a plate of hot steaming kothu parotta. A complete meal in itself, it’s quite the crowd-pleaser.

  1. Heat oil in a pan and add the onion, green chillies and curry leaves.
  2. Once the onion cooks, add ginger and garlic paste and cook for a minute.
  3. Add the tomatoes and salt; cook for another three minutes.
  4. Add the mushroom and cook for a minute or two.
  5. Add the turmeric, chilli powder, coriander powder and garam masala.
  6. Mix well and cook for thirty seconds.
  7. Add the chopped parotta and cook for a minute, stirring rigorously. Remove from heat.
  8. Garnish with coriander leaves and serve hot.
