Nothing like Kothu Parota
Nothing says street food like a plate of hot steaming kothu parotta. A complete meal in itself, it’s quite the crowd-pleaser.

Ingredients

cups
button mushroom
chopped

Parottas
cut/torn into pieces

teaspoons
vegetable oil

strand Curry leaves

onion

green chillies
chopped

teaspoons
ginger and garlic paste

tomato

Turmeric powder

teaspoon
chilli powder

coriander powder

garam masala

coriander leaves
chopped
salt to taste
Instructions
Heat oil in a pan and add the onion, green chillies and curry leaves.
Once the onion cooks, add ginger and garlic paste and cook for a minute.
Add the tomatoes and salt; cook for another three minutes.
Add the mushroom and cook for a minute or two.
Add the turmeric, chilli powder, coriander powder and garam masala.
Mix well and cook for thirty seconds.
Add the chopped parotta and cook for a minute, stirring rigorously. Remove from heat.
Garnish with coriander leaves and serve hot.
