Ingredients

black eyed beans

cups
ash gourd
cut into cubes

Green chilies

thick coconut milk
salt to taste

Instructions
In a cup and a half of water, pressure cook the beans on a low flame for six to seven whistles.
Separate the beans and stock and discard the stock.
In two cups of water, cook the ash gourd, green chilies and salt to taste.
Cook until the gourd becomes soft.
Mix in the black eyed beans.
Pour in the coconut milk and add a few curry leaves.
Allow the curry to cook on a low flame for five minutes.
Stir in a teaspoon of coconut oil into the curry and then remove it from the stove.
Serve!
