For the garnish
a few coriander leaves

Instructions
Rinse the poha to soften it to a mashable state.
Add salt and turmeric powder. Mix well.
Dry roast the peanuts to make them crunchier. Keep aside.
Heat oil in a pan and crackle the mustard seeds.
Then add the potato and onions and sauté till the onions become translucent.
Now add the curry leaves and sauté for roughly half a minute.
Add the roasted peanuts and poha and stir. Cover and cook on a low flame for 2-3 minutes, stirring once or twice in between.
Turn off the stove and let the poha sit for about a minute. Stir.
Remove the lid and garnish with lime juice and coriander leaves.
Stir and serve hot.
