  1. Mix the flour, salt, and soda in a bowl well
  2. Add the curry leaves, ginger, and green chilies to this and mix well.
  3. Add the sliced onions and mix.
  4. Add enough water to make a thick enough batter to be shaped roughly between palms.
  5. Heat oil and add spoonfuls of batter into it.
  6. Fry turning occasionally until the vadas turn golden brown evenly on all sides.
  7. Keep heat to medium low so the insides are cooked as well.
  8. Serve hot with thick coconut chutney or chili sauce.
