  1. In a mixing bowl add the wheat flour, rava, rice flour, salt, and sugar. Mix well.
  2. Add the ghee to the mixture and mix well.
  3. Finally, add water and mix well to make a soft dough.
  4. Divide the dough into 10 lemon sized balls.
  5. Heat oil in a heavy bottomed pan or kadai and deep-fry the varkey in batched.
  6. Remove using a slotted spoon. Drain excess oil on a paper towel.
  7. Serve with tea.
