  1. Begin by rinsing the pig well in cold water.
  2. Take a large sized bag which is strong enough to fit the pig and other ingredients.
  3. Put the water, salt and sugar in the bag and stir to dissolve the sugar and salt.
  4. Put the pigs in the bag and tie it up making sure that all the excess air is removed.
  5. Keep the bag in the refrigerator for one day turning it once and let it brine.
  6. To begin cooking the meat, preheat the oven to 250°F and dry up the pig using kitchen towels.
  7. Stuff the inside of the pig with a foil and put it on the baking tray, stomach downwards.
  8. Tuck the back legs under the pig so that they are pointing forward and tuck the front legs on the sides.
  9. Keep the head aligned with the back using some more foil and cover the pig completely with foil before putting it in the oven.
  10. Let the pig roast, turning it once when the temperature of the meat is 130°F.
  11. Then remove the foil and baste the pig with oil and keep it in with an increased temperature of 400°F.
  12. Keep basting it every 15 minutes and rotating till the internal temperature of the meat is 160°F.
  13. Rest the roasted pig for at least 20 minutes before carving.
