  1. Soak the cashews in the water for ten minutes and grind into a paste.
  2. Heat one tablespoon of oil and sauté the onion, ginger, garlic and green chili for a minute.
  3. Add the tomatoes and cook until soft.
  4. Add the spinach and cook until the leaves wilt.
  5. Allow the mixture to cook and grind into a puree.
  6. Heat up another tablespoon of oil and fry the cumin seeds.
  7. Fry the mushrooms and salt for two minutes.
  8. Stir in the powders.
  9. Then, add the spinach pure and add a little water to make a gravy consistency.
  10. Stir in the cashew nut puree.
  11. Finally stir in the garam masala and kasoori methi.
  12. Your gravy is ready!
