Spinach, meet Mushrooms!

For the gravy

½onion

packedspinach

For cashew paste

cashews

warm water
Instructions
Soak the cashews in the water for ten minutes and grind into a paste.
Heat one tablespoon of oil and sauté the onion, ginger, garlic and green chili for a minute.
Add the tomatoes and cook until soft.
Add the spinach and cook until the leaves wilt.
Allow the mixture to cook and grind into a puree.
Heat up another tablespoon of oil and fry the cumin seeds.
Fry the mushrooms and salt for two minutes.
Stir in the powders.
Then, add the spinach pure and add a little water to make a gravy consistency.
Stir in the cashew nut puree.
Finally stir in the garam masala and kasoori methi.
Your gravy is ready!
