Pearl Barley Salad with Pomegranate and Avocado
A healthy salad with the goodness of pearl barley, pomegranate and avocado. Drizzled with olive oil and lemon juice.

Instructions
  1. Soak the barley for at least 1 hour in luke warm water, then boil it for 7-8 minutes in salted water.
  2. Strain the water and cool it down to room temperature.
  3. Add chopped avocado and tomato to the barley with pomegranate, chopped onion, chopped mint leaves, lemon juice and extra virgin olive oil.
  4. Add salt to taste, and serve cold.
