Ingredients

white cake mix

sour cream

Buttermilk

Milk

shortening

tsp
peppermint extract
Green food colouring gel
For the frosting
1
cup
unsalted butter
4
cups
confectioners’ sugar
2
tbsp
heavy cream
1/4
tsp
peppermint extract
2
drops
green food dye
2/3
cup
mini chocolate chips
Instructions
Separate the eggs and retain three of the yolks and one white. Whisk together.
Combine this mixture with half the sour cream, the cake mixture and the shortening.
Stir in the other half of the sour cream.
Add the green gel food colour until you get the colour desired and mix well. Preheat an oven to 350F.
Pour the batter in miniature cake pans and bake for ten minutes, until a toothpick poked into them comes out clean.
To make the frosting
Beat the butter with an electric mixer until smooth and creamy.
Stir in the sugar, cream and peppermint extract.
Continue beating on high speed for three minutes until the frosting thickens.
Reserve a quarter of the frosting and then stir in the green food colouring to the remaining three quarters of the frosting.
Stir in the chocolate chips into the green frosting by hand.
Take the cakes out of the oven and allow them to cool.
Frost the cakes with a thin layer of the white frosting and a thick layer of the green frosting.
Serve and enjoy!
