An easy bacon salad that’s just pleading to be at your Easter Brunch.

  1. Wash and cut potatoes into 1-inch chunks.
  2. Place the potatoes in a large pot with enough water to cover them.
  3. Add salt and place over medium high heat. Bring to a boil and reduce to a simmer.
  4. Cook until the potatoes are tender but not mushy.
  5. Drain them well.
  6. Combine the mayo, sour cream, and ranch dressing mix.
  7. Combine everything except the onions.
  8. Refrigerate until ready to serve and then garnish with green onions.
