Prawns Ahoy
A tasty Goan prawn pulao.

coriander leaves

Cashew nuts

green cardamoms

peppercorns

cinnamon sticks

ginger garlic paste

chicken stock
Instructions
Sauté the whole spices in the oil over a low flame for 2-3 minutes.
Add the cashew nuts and sauté for a further 2 minutes.
Stir in the onions and green chilies and sauté until the onions brown.
Add the prawns and the ginger garlic paste.
Mix well and add the tomatoes.
Toss the tomatoes for a minute and add the coriander and half the mint leaves.
Stir in the rice and add the chicken stock.
Add a little salt and cover the pan.
Allow the rice to cook for twenty or so minutes.
Check that the prawns and the rice are cooked through and then take the pulao off the stove.
Garnish with mint and coriander leaves.
