Minty Fresh
Delicious, cooling sorbet.
Ingredients
1 1/2
cups
sugar
1
cup
fresh mint
chopped
Zest of one lemon
1
cup
boiling water
1/2
cup
Lemon juice
Instructions
Mix the sugar, mint and lemon zest together.
Stir the boiling water into this mixture until the sugar completely dissolves.
Allow the mixture to sit for 20 minutes and then strain.
Stir in the lemon juice and chill the mixture until cold.
Pour this mixture into a metal cake pan and freeze until solid.
Once solid, break into chunks and process in a food processor until smooth.
Serve.
