Beignet Recipe
Delicious beignets sprinkled with sugar and honey.
Ingredients

active dry yeast

cups
warms water
1/2
cup
white sugar

eggs

cup
evaporated milk
7
cups
all purpose flour
1/4
shortening
1
quart
vegetable oil
1/3
cup
confectioners’ sugar
1
bottle honey
Instructions
Mix the yeast into the warm water.
Stir in the sugar, salt, eggs and evaporated milk and blend.
Add four cups of flour and blend until smooth.
Fold in the shortening and add the remaining flour.
Cover it and chill for 24 hour.
Roll the dough out into a 1.8 inch thick disc.
Cut into 2 1/2 inch squares.
Heat oil to 360 degrees and deep fry the beignets.
Remove from the oil once they turn golden brown and drain on paper towels.
Sprinkle the sugar over the beignets.
Liberally spoon honey over the beignets and serve warm.
