Stir Up Some Vegetables
Use this recipe to make a delicious vegetable stir fry with a tamarind tang.
Ingredients

medium sized raw bananas
cut lengthwise

yellow pumpkin
cut lengthwise

brinjals

A medium sized tamarind ball
pinch
aof Hing
pinch
Aof Turmeric Powder
salt to taste
Grind

Raw rice

fenugreek seeds

Dried Red Chilies
For Seasoning

mustard
a few curry leaves

coconut oil
Instructions
Extract tamarind extract by soaking the ball of tamarind in hot water for ten minutes.
Add the vegetables to the tamarind extract and cook on a stove.
Add turmeric powder, hing and salt and stir.
Cover the vessel and cook until the vegetables are soft.
Remove the cover and cook until the water evaporates.
Take the cooked vegetables of the stove.
Dry roast the raw rice followed by the methi seeds and then the chillies.
Allow the mix to cool and then grind into a fine powder.
Splutter the mustard seeds and then fry the curry leaves.
Add the cooked vegetables and allow them to roast, sautéing occasionally.
Once the vegetables roast, gently stir in the curry powder.
Remove the vegetables from the stove and serve!
