Ingredients
3
cups
sweet potato
diced
2
cups
pumpkin
diced
cup
½Scraped coconut
2
Green chilies
tsp
¼Turmeric Powder
salt to taste
For Tempering
1
tbsp
coconut oil
tsp
½mustard seeds
1
tsp
urad dal
Few curry leaves
Instructions
Heat oil in a wok.
Add the mustard seeds, once it splutters, add the urad dal and curry leaves. Fry till the dal turns golden brown.
Now add the diced sweet potato and pumpkin.
Add turmeric powder and salt to taste.
Cover and cook until on low flame until the vegetables are done.
Sprinkle little water if required. Keep stirring once in a while to avoid burning the vegetables.
Grind coconut and green chillies into a coarse paste without adding any water.
Add this to the vegetables and mix well.
Turn off stove.
Serve.
