  1. In a medium-sized wok or kadhai, bring the milk and grated carrots to a boil.
  2. Stir occasionally and simmer for 15 to 20 minutes.
  3. While the carrots and the milk simmers, chop and roast the pistachios.
  4. Now, in a mortar and pestle, ground the cardamom.
  5. Once the carrots absorb the milk, add the jaggery and cardamom and mix it in.
  6. Now serve the halwa piping hot with roasted pistachios.
