Ingredients

cup
rava
6
tbsp
ghee

sugar

of saffron threads

green cardamom pods

chopped cashews
Instructions
Using a mortar and a pestle pound the cardamoms into powder and set aside.
Pound the saffron strands and set aside.
On a low flame, heat up the ghee in a kadai.
While the ghee heats, combine the sugar and water in pan and set it over a high flame.
Add the powdered saffron to this mixture and allow it to come to a boil.
Once it boils, lower the flame and let it simmer.
Meanwhile, while waiting for the solution to come to a boil add the rava to the ghee, stirring constantly.
Add the cashew nuts to the rava and keep stirring.
Stir the rava and cashews until the grains change color.
Once the grains change colour, pour in the hot sugar and water solution.
Continue stirring the mixture until it begins to thicken, and coagulate in the center.
Then, cover the mixture and switch of the flame, allowing the rava kesari to sit for five minutes.
