Vegetable Filled Omelette

of a ripe avocado
seeded and chopped

dried basil

Instructions
Method
In a bowl, whisk together the eggs, water, basil, salt and pepper
In another bowl, mix together the tomatoes, cucumber and avocado
On a non-stick pan, spray cooking spray or add a dash of butter or oil and then pour the egg mixture into the pan
Using your spatula, stir the eggs till there’s a combination of cooked and liquid egg and then stop till the egg is set
Scoop up some of the vegetable filling and set it on one side of the omelette, then carefully fold over the other side and leave for a few minutes
Then remove the omelette from the pan and serve.
