Roasted Sweet Potato Salad Recipe
A healthy and simple salad made with roasted sweet potatoes.
Ingredients

Capsicum chopped

spinach

Mint leaves chopped

coriander leaves (chopped

chopped garlic

olive oil

Red dry Chili flakes

salt to taste
Instructions
Wash and slice the sweet potatoes.
Take a shallow pan.
Set it on the stove and turn on the heat.
Add the oil.
Add the sliced sweet potatoes.
Sprinkle salt, mint leaves and red chili flakes.
Turn off the stove.
Put a lid on the pan, the sweet potato will cook in its own steam.
Cook for 20 minutes in the oven at 170 degrees C temperature, in the same pan, add water if required.
Once the sweet potato is roasted, turn off the heat.
Immediately add the, honey, capsicum and spinach.
Close the lid. The heat will soften the capsicum and the spinach to a nice crunch.
Garnish with coriander leaves and serve cold
