Ingredients
1/3
cup
barnyard millet
samvat rice
3
cups
Milk

Cashew nuts
chopped

tbsp
Golden Raisins

tbsp
sugar
½
tsp
green cardamom powder
9
strands of saffron

Instructions
Soak the barnyard millet in a cup of water for an hour.
Drain and keep aside.
Heat the milk on a medium flame.
When the milk begins to boil, add the soaked barnyard millet to the pan, and stir well.
Cover the pan and reduce the flame. Allow the mixture to simmer for twenty minutes, stirring occasionally.
After twenty minutes, stir in the sugar until it dissolves.
Add the cardamom powder and saffron and stir.
Add the cashew nuts and raisins.
Allow the kheer to simmer for a minute and then remove it from the stove.
Garnish with saffron strands, or cashew nuts.
Recipe Notes
This kheer can be served either hot or chilled.
