One of the most popular chinese starters. It is made with vegetables layered on toast, topped with sesame seeds and then deep fried.

  1. Heat one tablespoon of oil in a wok or frying pan over a high flame. Add the spring onion whites carrots, french beans, capsicum, celery and stir fry for 3 to 4 minutes.
  2. Add the potatoes, spring onion greens, soya sauce, chilli powder and salt and cook for a few more minutes. Cool the mixture.
  3. Spread a little mixture on each bread slice and press well by hand to make an even layer.
How to proceed
  1. Make a paste of the flour with ½ cup of water. Apply this paste over the vegetables.
  2. Sprinkle the sesame seeds over the vegetables and press them down gently.
  3. Deep fry the bread slices in hot oil over a medium flame until they are golden brown. Drain on absorbent paper.
  4. Cut each slice into 4 long strips and arrange on a serving plate.
  5. Serve hot, dotted with chilli sauce.
