Shrimp Up- Scampi Style
Shrimp, scampi, bacon and pasta- I need to come home to this.
Ingredients

flat leaf parsley
chopped

slices
thick-cut bacon
8
oz
angel hair pasta

pound
fresh shrimp
peeled, de-veined, tails removed

tablespoons
blackening seasoning

cup
petite diced tomatoes
drained
3/4
cup
low sodium chicken broth
2-3
cloves
minced garlic
1/2
tsp
crushed red pepper
1/2
cup
scampi sauce
1
tablespoon
fresh lemon juice
Instructions
Cook pasta according to package directions. Drain.
Chop parsley.
Cut bacon into bite-size pieces.
Cook bacon in a large, 12-inch skillet over medium to medium-high heat, stirring occasionally, until almost done, about 7-10 minutes.
Drain off excess fat.
Evenly coat shrimp with blackening seasonings and add to bacon.
Cook one minute.
Stir in tomatoes, broth, garlic, and pepper flakes.
Cook for 2-3 minutes, or just until shrimp turn opaque.
Stir in scampi sauce and lemon juice.
Gently stir in drained pasta. Top with parsley and serve.
