For Dhokla

For Tempering

Instructions
Mix besan, sooji, hing, salt and sugar in a bowl and keep aside.
Remove the seeds from the green chillies and grind them into a paste along with ginger.
Now add this paste to the flour mix along with oil, citric acid and some water to make a batter.
Mix till well combined and aerated.
Now add eno and mix it up well into the batter.
Grease the dhokla steamer and pour in the batter.
Boil water keeping the slotted pan as the base.
Once the water boils, and carefully keep it above the strainer covering it.
Let the batter steam for about 15 to 20 minutes so that it cooks through.
Take the khaman cake out and cut out the pieces in the shape you like.
Now heat oil and add mustard seeds.
Once the seeds crackle, add curry leaves and green chillies and after a few seconds, sugar and water.
Don’t add chillies to the tempering if the kids can’t tolerate the heat.
Pour the tempering over the dhokla pieces.
