Instructions
  1. Melt butter over medium heat. Add onions and saute until they soften.
  2. Add garlic, flour and season with salt and pepper.
  3. Cook, stirring constantly for around 2 minutes.
  4. While whisking vigorously, slowly pour in evaporated milk.
  5. Cook mixture, until it begins to thicken (stirring quickly).
  6. Then pour into a slow cooker along with chicken broth, diced broccoli and thyme.
  7. Cover with lid and cook on HIGH heat for 2 1/2 – 3 hours or low heat for 6 hours.
  8. Turn heat to warm and stir in heavy cream, then add in shredded cheddar cheese and Parmesan – stir to blend.
  9. Season with more salt and pepper to taste and serve.
