  1. Beat the egg yolks and stir in the butter and icing.
  2. Then, knead in the flour until your get a crumbly batter.
  3. Add a little water until the batter just about becomes smooth and divide it into half.
  4. Roll into two balls and store one ball in a freezer.
  5. Flatten the other dough out and wrap with cling film.
  6. Chill for half an hour.
  7. Combine the fruit and sugar and add a little water.
  8. Heat this mixture over a stove until the fruit softens.
  9. Place the fruit into a pie dish.
  10. Preheat an oven to 190C.
  11. Cover the pie dish with the rolled pastry.
  12. Trim any excess party off the edges and crimp.
  13. Make a hole in the middle of the lid and brush the top with the rest of the egg yolk.
  14. Add a little castor sugar.
  15. Bake for half an hour.
  16. Take out of the oven.
  17. Serve and enjoy.
