Gooseberry Pie Recipe

For the filling

gooseberries

Instructions
Beat the egg yolks and stir in the butter and icing.
Then, knead in the flour until your get a crumbly batter.
Add a little water until the batter just about becomes smooth and divide it into half.
Roll into two balls and store one ball in a freezer.
Flatten the other dough out and wrap with cling film.
Chill for half an hour.
Combine the fruit and sugar and add a little water.
Heat this mixture over a stove until the fruit softens.
Place the fruit into a pie dish.
Preheat an oven to 190C.
Cover the pie dish with the rolled pastry.
Trim any excess party off the edges and crimp.
Make a hole in the middle of the lid and brush the top with the rest of the egg yolk.
Add a little castor sugar.
Bake for half an hour.
Take out of the oven.
Serve and enjoy.
