Take Moong dal in a vessel. Add turmeric powder and water and pressure cook for 3-4 whistles till you have a soft and mushy dal. Mash the dal and set it aside
Take green chili, ginger and cumin seeds and grind it to a smooth paste and set it aside
Then, add veggies and stir-fry in high flame for 3-4 minutes. Then, add thin coconut milk and stir once and cover and cook the veggies till they are soft
Once the veggies are cooked, add salt. Add mashed dal and stir well. Cook for 2 minutes
Finally add thick coconut milk and stir once and switch off the flame. Do not bring it to boil after adding thick coconut milk.
