Stewin’ Good
A traditional Irish stew recipe perfect for St Patrick’s Day.
Ingredients

lamb neck meat
chopped
1
kg
potatoes
peeled and chopped
1
kg
carrots
chopped
2
onions
sliced into rings
1/2
tsp
fresh thyme leaves
fresh chives
chopped
For the stock
Lamb bones
1
large carrot
quartered
1
onion
quartered
1/2
celery stick
quartered
1
Bay Leaf
2
thyme sprigs
1
parsley sprig
6
black peppercorns
Instructions
Add all the ingredients for the stock to 3 litres of water.
Bring this mixture to a boil and then simmer for two hours.
Strain the stock and continue boiling until it is half of its original quantity.
Boil the lamb in the stock for ten minutes, skimming off any froth on the surface.
Stir in the potatoes, carrots and onions and season with salt and pepper.
Simmer the stew for ten minutes.
Stir in the thyme and continue simmering for 15-20 minutes until the lamb is cooked.
Take off the heat and cover for 15 minutes.
Serve and enjoy!
