Instructions
On a mandoline, slice the purple potato paper thin.
In the hot water, dissolve the salt and add the potato.
Let it soak till the water cools down for 20 minutes.
Take a heavy-bottom pan and add oil upto 2-inch length of the pan.
Heat the oil till it reaches 350 degrees.
Drain the potatoes and pat dry them.
Fry the potatoes till crisp but retains their purple colour.
Put these on a plate lined with paper towel.
Let the chips cool down.
Add the creme fraiche and 1/4 teaspoon of caviar just before serving.
