Ingredients

Sweet potatoes
cubed
450
grams
wheat pasta of your choice
cup
¾almond milk
1/3
cup
nutritional yeast
1
cup
cashews
soaked overnight
tablespoon
½Miso
tablespoon
½garlic powder
tablespoon
½chilli powder
tablespoon
½cumin powder
tablespoon
½salt
cup
¾sunflower seeds
Instructions
Keep an oven pre-heated at 425 degrees F.
Cook the pasta according to the packet directions till al dente. Bake the cubed sweet potatoes until soft.
Blend 1 and ½ portion of the sweet potatoes with the almonds, cashews, spices and yeast until the sauce is creamy and smooth.
Mix in the sauce with the pasta and even it out in a baking dish.
Combine the sunflower seeds and yeast in a food processor and sprinkle over the pasta mixture. This will make for a crunchy topping.
Broil this for 4-5 minutes and serve hot!
