Sweet! It’s Healthy!
Mix baked sweet potatoes with delicious salad dressing for this healthy sweet potato salad.
Ingredients
1/2
kg
Sweet potatoes
boiled, peeled and chopped into large pieces.

tbsp
olive oil
1/2
a red onion
finely chopped
4
Spring onions
sliced lengthwise
A handful of chives
sliced
5
tbsp
sherry vinegar
2
tbsp
olive oil
2
tbsp
honey
Instructions
For the sweet potatoes
Preheat oven to 200 degrees Celsius.
Toss chopped sweet potato in 1 tbsp olive oil.
Spread the potato chunks on a baking tray lined with a baking sheet.
Roast for 30 – 35 minutes until golden.
Allow to cool.
For the dressing
Using a hand held whisk, gently whisk together the onion, spring onions, chives, sherry vinegar, olive oil and honey.
Mix the cooled sweet potatoes and dressing together using your hands.
Serve!
