Ingredients

of brown sugar

of ground coriander

tsp
of ground ginger
1
tsp
of turmeric
1
tsp
of Salt
1
tsp
of garlic powder

tsp
of chili powder

of Thai peanut sauce
1/2
cup
of coconut milk
1/2
cup
of chicken broth

boneless Chicken Breasts

of vegetable oil

tbsp
of chopped peanuts

tbsp
of thinly sliced scallions
Instructions
Mix the sugar and the dry ingredients in a bowl
In a separate bowl, add the peanut sauce, coconut milk and broth and mix well
Cut the chicken breast into diagonal strips
Add the chicken pieces to a bowl along with oil and coat well
Sprinkle the dry seasoning mix on the chicken strips
Heat a non-stick pan over medium and add the chicken pieces
Cook until they are golden crown
Remove from heat and set aside
Add the peanut mixture to the same pan and cook until it reduces
Serve the chicken strips with the peanut sauce in a separate serving cup.
