Creamy Coconut Rice
This delicious coconut rice is a fabulous dish to be served with Thai entrees.
Ingredients

long grain rice

can coconut milk
1/4
cup
Water
1/2
tsp
Salt
1/2
tsp
sugar
1/2
tsp
crushed red pepper flakes
1/8
tsp
Turmeric powder
1
tsp
Ginger
finely chopped
Sliced almonds
for garnish
Instructions
Mix all the ingredients aside from the sliced almonds together in a large pan.
Cook this mixture on high heat, stirring constantly.
Allow the mixture to boil and then reduce the flame to low.
Cover this pan and cook the rice for 15 to 18 minutes.
Remove the cover, fluff the rice with a fork and then cover the pan again.
Allow the rice to sit for five minutes.
Garnish with the sliced almonds and serve.
