Do The Cucumber Toss!
This thai cucumber salad is a refreshing side to spicy Thai food. I prefer it without hot peppers or peanuts since its major purpose for me is refreshment. It’s especially quick to make if you can slice the cucumbers and onions in a food processor.

  1. Peel and seed the cucumbers.
  2. Chop them into half lenghtwise, and then cut them into 1/4 inch pieces.
  3. Rinse them and allow them to drain for thirty minutes.
  4. Pat dry with a paper towel.
  5. Toss the cucumbers with salt.
  6. Whisk the sugar and vinegar in a mixing bowl until the sugar dissolves.
  7. Toss the cucumbers, jalapenos and cilantro in this mixture.
  8. Add the peanuts to the top of the salad and serve!
