Ingredients
800
g
¼” wide flat rice noodles
cup
¼vegetable oil

garlic cloves
chopped

¼chopped fresh Thai chilies

ground chicken

¼fish sauce
cup
¼black soy sauce
cup
¼Golden Mountain sauce
or light soy sauce

large plum tomatoes
each cut into 6 wedges

Anaheim chiles or Italian frying peppers
cut into strips, or 2 green bell peppers

½fresh Thai basil leaves
Instructions
Cook noodles in large pot of boiling salted water until tender but still firm to bite, stirring frequently. Drain.
Heat oil in heavy large pot over medium-high heat.
Add garlic and Thai chilies; sauté 30 seconds.
Add chicken, fish sauce, black soy sauce, and light soy sauce. Sauté until chicken is cooked through, about 4 minutes.
Add noodles, tomatoes, and Anaheim chilies; toss to coat.
Garnish with basil leaves, and serve.
