Salad Capers
Ingredients

packet hoikken noodles
24
kings prawns
peeled and deveined

packet
Asian greens

tbsp
Peanuts
crushed
For the dressing
1/4
cup
Lemon juice
1
tbsp
lime juice

tbsp
coriander
finely chopped
3
tbsp
light olive oil
1
tbsp
fish sauce
1
tsp
brown sugar
1
tsp
Ginger
grated
1
red chili
deseeded and sliced
Instructions
For the dressing
Combine all the ingredients for the dressing together.
Putting together the salad
Cook and drain the noodles.
Boil the prawns until they’re pink.
Allow the noodles and prawns to cool.
Add the Asian greens, peanuts and prawns to the noodles and toss.
Pour the dressing over the salad and toss again to combine.
Serve!
